Tommy Bahama’s Blackberry Brandy BBQ Recipe – I guarantee, if you love BBQ, you will love this Blackberry Brandy BBQ Sauce on your ribs! – Full Rack Baby Back Ribs ((trimmed)), Rib Rub ((recipe follows)), Rib Marinade ((recipe follows)), Asian Slaw ((recipe follows)), French Fries, Rib Rub:: Light Brown Sugar, Blackening Spice, Jerk Seasoning, Kosher Salt, Rib Marinade:: Liquid Smoke, Coca Cola, Worcestershire Sauce, Water, Blackberry Berry BBQ Sauce:: Minced Shallots, Red Wine Vinegar, Worcestershire Sauce, Ketchup, Blackberry Brandy, Honey, Cornstarch Slurry ((even parts, cool water and cornstarch)), Asian Slaw:: Green Cabbage ((shredded)), Red Onion ((thinly sliced)), Jicama ((cut into 2" long, thin slices)), Cilantro ((leaves, chopped)), Lime Vinaigrette:: Lime Juice ((fresh)), Olive Oil Blend ((3 parts Canola, I part Extra Virgin Olive)), Salt, Pepper, Make the Rib Rub:: Mix all Rib Rub ingredients well.; Make the Rib Marinade:: Mix all Rib Marinade ingredients well in a mixing bowl with a wire whisk.; Cooking the Ribs:: Lightly coat each side of the ribs with the dry rub.; Place a metal baking rack in the bottom of a large roasting pan.; Arrange ribs bone to bone. Cover with the marinade.; Cover the roasting pan with the aluminum foil.; Bake in a preheated 350 degree oven for 3½ hours or until a bone comes out clean.; Cool in the liquid.; Make the Blackberry Brandy BBQ Sauce:: Combine all ingredients except the cornstarch slurry into a saucepot and bring to a boil.

; Reduce to a simmer and cook for 45 minutes.; Add the slurry, turn the heat to medium high and continue to cook for 5 minutes until the sauce coats the back of a spoon.; Remove from heat and cool.; Make the Asian Slaw:: Slice the red onions, then place in ice water bath for 20 minutes. This will give the onions a less intense flavor.; Drain well. ; Add to cabbage, jicama and cilantro. Toss well.; Make the Vinaigrette:: Mix the salt and pepper together. ; Dissolve salt and pepper mixture into lime juice.; Then slowly add the olive oil blend with a whisk. Mix well. ; For each portion, mix together 1-½ ounces Asian Slaw and ½ ounce Lime Vinaigrette. Serve in chilled cups. ; To Serve:: Place ribs curved side up on a preheated medium grill, heat through on one side then flip to heat the other side, brush generously with the BBQ sauce and heat until the edges of the bones begin to bubble.; When ribs are hot, place on a large plate accompanied by the dressed asian slaw.; – The ribscan also be served with French fries or your favorite baked beans.

Ingredients

  • 6 Each Full Rack Baby Back Ribs (trimmed)
  • 1 Cup Rib Rub (recipe follows)
  • 4 Cups Rib Marinade (recipe follows)
  • 1/2 Cup Asian Slaw (recipe follows)
  • 5 Oz French Fries

Rib Rub:

  • 1 Cup Light Brown Sugar
  • 1-1/2 Tbsp Blackening Spice
  • 7 Tbsp Jerk Seasoning
  • 3 Tbsp Kosher Salt

Rib Marinade:

  • 4 Tbsp Liquid Smoke
  • 1-1/2 Cups Coca Cola
  • 1 Tbsp Worcestershire Sauce
  • 1 Cup Water

Blackberry Berry BBQ Sauce:

  • 4 Tbsp Minced Shallots
  • 3/4 Cup Red Wine Vinegar
  • 2 Cups Worcestershire Sauce
  • 1-3/4 Cup Ketchup
  • 1 Cup Blackberry Brandy
  • 1-1/4 Cup Honey
  • 1 Tbsp Cornstarch Slurry (even parts, cool water and cornstarch)

Asian Slaw:

  • 1 Cup Green Cabbage (shredded)
  • 1/2 Cup Red Onion (thinly sliced)
  • 1/2 Cup Jicama (cut into 2" long, thin slices)
  • 1-1/2 Tbsp Cilantro (leaves, chopped)

Lime Vinaigrette:

  • 1/4 Cup Lime Juice (fresh)
  • 1/2 Cup Olive Oil Blend (3 parts Canola, I part Extra Virgin Olive)
  • 1/2 tsp Salt
  • 1/2 tsp Pepper

Make the Rib Rub:

  1. Mix all Rib Rub ingredients well.

Make the Rib Marinade:

  1. Mix all Rib Marinade ingredients well in a mixing bowl with a wire whisk.
