My mother-in-law grew up in Sardegna (Sardinia), Italy and makes the most delicious food! This recipe for Authentic Italian Lasagna comes directly from her family in Italy, and it’s one of our favorite dinners to make and share with others.

Does Authentic Lasagna Have Ricotta?

Authentic lasagna is made with bechamel (creamy, white, and smooth!) and red sauce. Which is what you’ll find in this Italian recipe. It’s amazing and makes the mozzarella cheese seem extra melty.

That being said, ricotta is an acceptable alternative if you just don’t have the time to make a bechamel. But rest assured– if you can take the time, the extra effort of making homemade bechamel is totally worth it.

In case you were wondering: traditional American lasagna uses ricotta cheese and meat sauce as the filling for each layer, while classic Italian lasagna bolognese uses meat sauce and bechamel instead.

What is the difference between Lasagna and Lasagne al Forno?

In Italy, “lagana” refers to one sheet of pasta and “lasagne” refers to multiple sheets of pasta. Since this dish is made with multiple sheets of pasta, it’s called “Lasagne” or “Lasagne al Forno” in Italian.

But in other countries, the dish as a whole is typically referred to simply as “lasagna.”

FAQs

Do Italians put ricotta in lasagna? ›

While ricotta is included in certain varieties of lasagna in Italy, the style that serves as the primary inspiration for American recipes is the one from the region of Emilia Romagna. There, it's traditionally layered with pasta, bolognese, and béchamel—with no ricotta to be found.

How many layers does authentic lasagna have? ›

Generally, lasagna has about 3 or 4 layers of pasta, with sauce, ricotta cheese, mozzarella, béchamel, and sometimes meat or even meatballs or sausage between those layers. Our many layer lasagna has around 12 layers of pasta, or even more depending on how thin you end up rolling the dough.

What is traditional lasagna made of? ›

The noodles are layered with a flavorful meat sauce made with Italian sausage, vegetables, crushed tomatoes, and cream, as well as creamy ricotta, gooey mozzarella, and Parmesan cheese. Baked until bubbly and golden, it's the perfect cozy dish for a crowd, and it reheats and freezes well, too.

Do Italians put eggs in lasagna? ›

While it may seem strange to include hard boiled egg in lasagna, it is actually a very common ingredient in southern Italy.

Which is better for lasagna cottage or ricotta? ›

The key to creating the absolute best lasagna is to use a combination of ricotta and cottage cheese. Ricotta brings the rich creaminess while cottage cheese lightens things up and seasons the whole dish. For even more cheese, we recommend also using shredded Mozzarella cheese and Parmesan cheese (or Pecorino Romano).

What does adding egg to ricotta for lasagna do? ›

For extra creamy ricotta, add in an extra egg, a handful of grated parmesan, and a quarter cup of shredded mozzarella. Eggs help prevent the ricotta from drying out and serve to bind the ricotta so it doesn't become runny.

What is the correct order to layer lasagna? ›

The correct way to compose lasagna is: ragù sauce on the base, then: lasagna pasta, besciamella sauce, ragù sauce, grated parmesan cheese for each layer, tipically 4 or 5 layers, no more because it will get difficult to bake and the pasta will not be completely cooked in the middle layers.

Do you put cheese on every layer of lasagna? ›

Begin Layering

After the initial sauce layer, add a layer of pasta sheets, ricotta mixture (or bechamel), sauce, and cheese. Then repeat the layers. Top the last layer of your lasagna with sauce and cheese. You can also alternate layers of sauce and ricotta cheese.

What is the final top layer of lasagna? ›

Finish off your lasagne either with a layer of tomato-based sauce or with your white sauce – whichever you have left – and then grate over plenty of Parmigiano-Reggiano. A common extra topping is torn mozzarella, which makes a lovely, melted cheesy layer on top.

Do Italians put meat in their lasagna? ›

In southern Italy lasagna is generally made with dried sheets of pasta layered with rich meat ragú, ricotta and mozzarella. In the north, especially in Bologna, the most popular version of lasagna features fresh egg pasta colored green with spinach and layered with ragú, bechamel and Parmigiano Reggiano.

What is the difference between Italian lasagna and American lasagna? ›

In case you were wondering: traditional American lasagna uses ricotta cheese and meat sauce as the filling for each layer, while classic Italian lasagna bolognese uses meat sauce and bechamel instead.

What do Italians serve with lasagna? ›

In Italy anyway, pasta is eaten alone, no side needed. And lasagne, that are already filled with bechamel, ragù, sometimes ham and mozzarella, topped with parmigiano reggiano, don't need any further side. You can have some vegetables after, but if you try my mother lasagna, you will not eat anything else for the day!

Do Italians eat bread with lasagna? ›

Do Italians eat bread and pasta at the same meal? Yes. They have, actually, a custom called scarpetta, which consists in soaking bread in the remaining sauce after eating pasta (or any other thing they ate).

What happens if you don't add egg to ricotta for lasagna? ›

Adding egg to ricotta cheese helps to bind the cheese for lasagna so that it doesn't ooze out of the casserole when you cut it. Basically, the egg helps all the cheesy goodness stay intact. So what happens if you don't put eggs in your lasagna? It'll just be a bit runnier, but omitting the egg won't affect the taste.

Why do people put boiled eggs in lasagna? ›

The pieces of the hard-boiled egg will add a creamy, rich disposition to the dish's other components, effortlessly blending between the levels of sauce and pasta.

What do Italians use instead of ricotta in lasagna? ›

Mascarpone: Another Italian cheese, mascarpone makes a great ricotta substitute. However, since mascarpone is more tart and flavorful, you should only use it in dishes with other strong flavors. It may overpower milder ingredients.

Do they use ricotta cheese in Italy? ›

Used in abundance all over Italy, ricotta—in all its various forms—has played an important part in Italian cucina for centuries. In the ancient times of the Roman republic, the production of ricotta was regulated by Cato the Elder—a statesman known for his humble origins and practical wisdom.

Does Italy use ricotta cheese in? ›

In Italy, ricotta is typically eaten as a filling for pasta or cannoli. Here in Racale, Margherita's ricotta is eaten by the spoonful — without even salt or olive oil. Light and pillowy in texture, it's like tasting a cloud of sheep's milk.
